Behind the recipe

Guacamole is an avocado-based dip that first developed in Mexico. Its name comes from the Classical Nahuatl ahuacamolli, meaning "avocado sauce." Avocados were domesticated by Mesoamerican groups by around 5000 BCE. The first known English-language description was recorded by William Dampier in 1697, noting a native Central American preparation of ground avocados, sugar, and lime juice. Guacamole remains central to Mexican cuisine and has become popular internationally, especially in the United States.

    Halve the avocados, remove pits, and scoop flesh into a bowl.

    Squeeze fresh lime juice over the avocado immediately to prevent browning.

    Dice the onion, tomato, and jalapeno into small pieces.

    Chop the cilantro finely and add it to the bowl.

    Mash the mixture with a fork, leaving some chunks for texture.

For more heat, swap the jalapeño for serrano; for less, remove the seeds and ribs before dicing.

Stir in diced mango or pomegranate seeds for a sweet-tart contrast.

Add crumbled cotija cheese on top for a salty finish.

Press plastic wrap directly onto the surface if storing leftovers for up to 1 day.
