Behind the recipe

Lasagna originated in Italy during the Middle Ages. The oldest known written references appear in a 1282 Bolognese ballad and a 1284 chronicle mentioning lagana cum caseo. The first recorded recipe, in the early 14th-century Liber de Coquina, describes fermented dough flattened into sheets, boiled, sprinkled with cheese and spices, and eaten with a pointed stick. The modern baked version, layered with ragù, béchamel, and cheese, is especially associated with Bologna and Emilia-Romagna, though regional variations exist throughout Italy.

    Saute onion and garlic in olive oil until softened.

    Add ground beef and sausage, browning until fully cooked.

    Stir in crushed tomatoes and basil, then simmer for 30 minutes.

    Mix ricotta with the egg and half the Parmesan.

    Cook lasagna noodles until al dente and drain.

    Layer sauce, noodles, ricotta mixture, and mozzarella in a baking dish.

Swap the meat to suit your pantry: use all ground beef, all sweet Italian sausage, or a mix of both.

Assemble the lasagna up to 1 day ahead, cover tightly, and refrigerate; bake straight from the fridge, adding 10–15 minutes to the covered baking time.

Let the lasagna rest for 10–15 minutes after baking so the layers hold their shape when sliced.

Leftovers keep, covered, in the refrigerator for up to 4 days and reheat beautifully in a 180°C oven.

Serve with a crisp green salad and crusty bread for a complete meal.
